The fruity flavor and pink color, which are naturally present in the ruby cocoa beans, make the chocolate stand out. Chefs and companies from all over the world have been inspired by the ruby chocolate innovation and consequently, we see many new product launches with ruby chocolate.

Most people know the Ruby Kitkat and the Ruby Magnum but there are much more successful ruby product launches out there. In this article, we highlight some successful launches in the biscuits and cakes category.

Cake launches with ruby chocolate

As a cake producer, you might be thinking “How can I use ruby chocolate?” Get inspired by some successful cake launches.

First of all, Waitrose launched a ruby chocolate and berry cake. It is a sponge cake with raspberry pieces, topped with ruby chocolate buttercream/ganache and ruby chocolate drops. As a finishing touch, freeze dried raspberry pieces are added. Ruby chocolate & red fruits makes a winning flavor combination!

On top Central Foods created a ruby raspberry cheesecake for the foodservice sector as part of their free-from range. Ruby chocolate is used in the cheesecake layer, and in the dark chocolate ganache, where the ruby chocolate swirl nicely stands out. Besides the wonderful flavor and appealing look it is also vegetarian and gluten-free!

Also Delicata, the exclusive private label brand of Albert Heijn, launched a ruby chocolate mousse cake. The fruity ruby chocolate-based mousse is combined with aerated layers of sponge cake, a fresh raspberry layer, and a crunchy base. Compared to the long-standing dark chocolate mousse cake, the ruby chocolate mousse cake appeals to different consumer groups, and hence generates on-top sales.

Finally, RUF launched a ruby homebaking product targeting the centennials and millennials. It is a refreshing no-bake cheesecake with a biscuit base made from pink biscuit crumbs combined with ruby chocolate decorations. Even the baking tin is included, so all you need to do is add a handful of fresh ingredients and the cheesecake is ready to chill and serve in just a few easy steps. Say cheese, Ruby!

Biscuit launches with ruby chocolate

Also in the biscuits category we have seen various inspiring launches.

Wernli was the first one to launch a ruby biscuit in Europe, with a ruby version of their “Choco petit beurre”. It is a crunchy biscuit with cocoa flavor and a ruby chocolate plaque on top. The ruby color contrasts nicely with the brown color of the cocoa biscuit. The ruby stamp front of pack indicates that ruby is made with ruby cocoa beans.

Bahlsen got a brand boost with the ruby version of their iconic “Choco Leibniz”. They launched the product under the Leibniz brand in their home market Germany, and under the Bahlsen brand in their international markets in Western Europe and USA. Besides the ruby stamp front of pack, there is also a text back of pack that explains the uniqueness and natural character of ruby chocolate. Such explanations are recommended as these help to raise consumer awareness and understanding of ruby chocolate.

The Panda cookies range of Kabaya got even more delicious with the ruby range extension! The ruby variant fits in nicely with the other inspiring flavors in the range such as matcha, creme brulee, and caramel. For companies exporting to Asia, it might be good to know that Japan is one of the key markets for ruby chocolate!
